It's beautiful! I would remove the granite , sink and faucet and replace it with wood. I'm sure you could stain the new top to match the rest of it.
Matching the finish on the vanity would be very difficult... many vintage and antique pieces in this style often had soap stone, or marble tops (in white or black). Replacing the top with a solid piece of marble (or any other stone, find a gorgeous piece with a lot of movement) would be easiest and stay true to the style of the furniture piece.
I like Marty's suggestion and I would also make either one large or two small hidden drawers between the new stone top and the doors which I'd make accessible from the sides.
Marble would be awesome. Marble can be expensive. A round $99 a square foot. That’s like $300 to $400 for your size piece.
The top is actually beautiful, be a shame to just discard it! I would consider cutting a board and route the edge with a rabbit so that the board would set closer to being flush with the top and maybe finding some material and foam to wrap the board with and let it be a accent of the top. The faucet holes could be covered and used to make a lamp in the back. One way or another I’d find a way to use the top on the cabinet as it is, it belongs there and would save on cost just to use what you already got! Far as the cabinet itself goes, you could make drawers that would sit behind the bottom two doors as well. Depending on your skill level and tools available to use? You may be able to do yourself or maybe find a handyman to build the drawers and install them for you.
I would try getting a piece of plywood cut to size gluing it in perhaps and then having a piece of mirror cut so that it’s in layes The Fossett holes making a light is a really good idea that would cover up the hole don’t know where that is and it’s flush with the top of the cabinet you would then have your dresser top where you could have your brushes your make up perfume but just so it was flush it would look like it belongs there The Fossett holes making a lamp would really be a good idea then that would just cover them up the pieces beautiful You have all good ideas being sent to you as long as you have a good woodworker the insides are endless
Another idea would be to remove the faucets and spout and have a piece of wood (not too thick) cut so it fits inside the bevel on the edge of the marble you have. Do (or have done) a very nice smooth paint job of black. This would ensure that it could be re-used in the way it is now, not cost much and still serve as a vanity.
You may be able to get a small piece of granite (that was a scrap) at a "Habitat for Humanity Restore", if you have these in your area.
A couple things I could think of. Fill hole with wood slightly thinner than the thickness of the wood top, then fill in with decorative tile. The other optionfill woth wood and faux paint it like marble or tole paint it.
I would remove the faucets add a thick glass over the whole top surface. you could use the area on top of the sink without hiding it’s true nature. If you want to be more creative you could add something in the sink like translucent pebbles, empty cute perfume bottles... hope it looks good
