I have chickens, how do I preserve the eggs? How long do eggs stay?

It is only a few chicken, I do give some eggs to friends.

    You can also hard boil some to use later for salads and the like.

    Unwashed eggs will last at least two weeks unrefrigerated, and three months if refrigerated. Washed eggs should be refrigerated, and will last at least two months, but won't taste as fresh as an unwashed egg of the same age.

    You can also freeze them - just crack them into a large ice cube tray or baby food jar. Eggs will burst if frozen in the shell

    The best way to test eggs to see if they are still good just place eggs in a bowl of cool water. The ones that float to the top are not good to eat.

    Keep them cool and out of the light and do not refrig until you are ready to use. Eggs that have never been refrig'd stay quite a while if kept cool, not cold, and out of the light.

    You can hard boil 3-4 dozen, peel them, and put them in a gallon glass jar, pour in 1/2 cup of salt, 2-3 Tbsp. of pickling spices, and about 3 quarts of vinegar to fill the jar. Close the lid tightly. After a day or more, you will have pickled eggs. One of the ways to get the traditional red color in pickled eggs is to pour the liquid from a jar of pickled beets in with the vinegar.

    For friends who are fishers or hunters, this is often a welcome generous gift. The eggs last a long time while providing protein without a meat smell. Which doesn’t rule out jerky as a favorite! 😇

    Put raw eggs out of shells into zipper freezer bags & with straw extract as much air from bag as possible, seal bag. Next, place zip bag of eggs inside vacuum sealing bags & vac seal. Freeze flat & eggs will keep almost indefinitely. Scramble & est or use in cooking. No moisture loss so no tough eggs nor freezer burns. This works well for me & I have dozens frozen in my freezer now.
