You have lots of options! You can mod podge it, paint it, stain it, hang art from it!
I am envisioning bead board cut to the exact shape of the back of the bureau. I do believe they come without a finish, as well painted.
Why not use wallpaper or Bamboo matting etc......
I don't know if you have the space but I would put a bookcase on the backside to serve as additional storage. Buy a cheapie and trim it out so it fits the back of that dresser. Line the back of the bookcase with pretty paper of fabric. Always need storage!
