I'm sure any color of stain would work on it just fine.
What color is your flooring and the baseboards? The previous owner had painted the mantel black, the baseboards were white and the flooring a mahogany. I painted the fireplace wall a darker shade of grey and the other walls a lighter gray and the black mantel and the surround looked awful. Painted it white and it looked so much better. I would wait until you paint the walls and the slate is installed and make your decision then.
I like the idea of gray clear stain. But, as Kalueke suggested, I think you should paint the walls and install your tile before making a decision regarding the mantel. Best of luck to you.
