If space allows, that would be a great place to store cook books. Especially if you can get a book shelf in there. Or maybe custom fit a couple shelves. Best of luck to you.
This sounds like an opportune place for your trash can. You could also purchase a rolling pullout for a variety of uses: pegboard for utensils, pot covers, shelves for spices/condiments, kitchen linens, etc. Or even a bookshelf for your cookbooks, either built in or freestanding.
A couple of stools and maybe you have a breakfast nook? Or as the last comment said add shelves for cookbooks. I have two shelves of cookbooks in my kitchen.

Build a shelf under it to hold baskets or cookbooks. Not fragile items.
