You can take all the grass up, but I wouldn't do it now. I've seen people burn all the grass and get it all up, plant new in the spring, just to have the hot sun bake the new roots. The best thing is to do this in the fall.

I am doing this to my back yard right now. I will not use chemicals due to kids, pets and environment. I sprayed the entire yard heavily with plain old white vinegar to kill anything out there - mine was predominantly crab grass - and the gardener will take out with a sod cutter.
There is a lawn machine ( I think it's called a TURF CUTTER) that will take up a layer of soil (up to several inches) and the grass. It works well if you wet the soil and grass prior to using it. If you had sod down, it would completely take it up and you could roll the sod up to remove it. I saw this used on a Property Brothers renovation for property in Chicago. It was amazing and quick. The people who used the machine wanted to plant a garden and it took up a layer just deep enough to remove the grass and then they used a tiller to break up the soil for planting.
I believe in doing it right the first time, so I suggest you check with a local nursery or university to find out where to get your soil tested. a master gardener can also help you define the best way to transform your lawn. I also love clover. It’s great for a healthy yard and encourages bees to come and pollinate in your area.

If you keep mowing it for the season, you may find it will sort itself out, and if not wait till Autumn to lay turf instead. You can hire a turf lifter from a hire shop.
Yes you thatch your lawn in the fall, or completely till it up and get all the grass out. Then you ariate it, and put your seed down, put your fertilizer down, water it so the seeds get damp, but don’t drown them. Try to sew your seed before there is a chance of rain, then you won’t have to water as much. Good luck to you.
