Also, tomatoes, maybe a Tiny Tim variety since it grows and produces pretty fast, can grow in a pot indoors, and the tomatoes are multi-colored.
For a small child, any vegetable that is quick growing like radishes. And something that they like to eat.

My kids and I have had a garden for years, and I love that you want to do it with your grandbaby :) Here are some of the thing we have grown - strawberries, pumpkins, squash (lots of varieties), lots of herbs, tomatoes, zucchini, green beans, and snap peas.
My kids like grape tomatoes and cucumbers. They can be grown in 5 gallon buckets if you dont have a garden already.
