You should decorate with whatever makes you happy. Will you get tired of it tomorrow? No one can know that but you and you likely won't know until it happens. Goes for chevrons too. If you like it, do it!

Trends come and go but classic looks have staying power.
Depends on how often you redecorate? It is just curtains that are easily changed if you get tired of them and curtains can easily be repurposed. I do not have enough disposable income to constantly redecorate on a whim, so I choose items that will last a number years and add DIY items here and there to freshen things up. Buffalo plaid has always been popular in some settings, mountain homes or lodges and if you live in an area like that, they can easily be incorporated into almost any decor style. There is no right or wrong, if you love it, they work! My mom did my little brothers bedroom in a forest green and navy buffalo plaid back in the mid 60's - he and his wife still have the curtains and bedspread and use in one of their guest rooms. They added in gold and brass accents and it still looks cozy and inviting.
It doesn't matter what the trend is, it is whether or not you can live with the look. If you like it, you won't get tired of it for a long time. Just because it is the trend, doesn't mean you will be able to live with it.
I love Buffalo plaid. Is that what you want or do you want chevron, which I also like. For myself I like white solid color (generally speaking) curtains since I often use sheets. What style furnishings do you have? My daughter has buffalo plaid curtains in a vacation house kitchen, but it is a log cabin. I got a remnant recently to use as a tablecloth. If the cost is not great, why not get them and use or interchange with other curtains?
Forget trends....go with your gut when selecting items for your home.
But a few tips:
60% of your room should favor 1 color (whether it be solid, plaid or print)
30% should be a complementary color (a color opposite on the color wheel - blue+orange; red + green; yellow. + purple) in all of their various shades
10% should be a "pop" ( surprise) color.
