Hi Spelofske, No matter what surface you're working on, always start with a clean surface. Use your level every step of the way. There are no laws against using shims when fitting cupboards. And last, but not waste, always measure twice and cut once. One more thing: purchase 10% extra on back splash and flooring materials to allow for waste and mistakes. Best of luck to you.
Here are some excellent sites with fantastic, step by step tips!
Before you do anything, since you are acting as your own GC, check your local building codes, pull your permits, get your inspection schedule and familiarize yourself with what you need to do to provide for a smooth remodel. If you are keeping your existing footprint ant just doing a "remove and replace" it will be easier. It you are moving, adding, subtracting electrical and plumbing, it all needs to be inspected and there will be down time while waiting. Line up your hired out trades.

HOU MUCH MONEY YOU CAN SPEND
I think you have been given a lot of good suggestions but one that I cannot emphasize enough is to measure, measure again and measure a third time to make sure it's accurate.
