I left in on the vine to keep growing but when I went to water and check on it, it was turning yellow and didn’t grow very big.

This will answer your question. This has been a strange year for plants of all kinds. Some areas are getting too much rain and some are getting none. https://www.youtube.com/watch?v=aoPAW7Yr0CU
Again,
A. plants of All kinds do not merit receiving Chinese Water Tortures adapted for Plants.
B. Water is by no means a Substitute for Minerals and Food.
They need Manures and what I call a Diarrhea Daiquiri treatment:
32 oz Water
8 oz Manure
1 Spritz of a Lemon
If these poor cucumbers had mouths these would all be screaming:
Help! HELLLP! Somebody! Somebody Please rescue me! Steal me away from this Cruel Owner and this Water Diet Torture! I need Food! Help!
So, you gotta feed them.
Did you miss picking them? In my experience, they have over-ripened when they yellow and you can't eat them.
Hello. A cucumber can become over rip and turn yellow. The chlorophyll begins to fade causing them to yellow. It also can be from a virus or over watering.
My experience has been that if left on the vine and picking young and green. They are not inedible however. You can make relishes- I just made dill relish. There is an old time recipe that called for only yellow cucumbers called slap jack pickles.Good and sweet. My first in- laws gave me the recipe but it is time consuming with salt soaking overnight, cooking till translucent- looked like pears. It is simply they have been on the vine too long. They can be used as I said for relishes as well.
I meant to say you did not take them young and green
