You can hang bins on the wall, buy one of those containers made to fit under a bed, use an empty dresser if there is room for one.
Could you hang a pole with hooked buckets on for pens etc.
Or use a hanging shoe sprocket store.
Plastic bins is what I used when I was stuck in bed. My wonderful ex hubby brought a cooler into my bedroom and set it up so I just had to open the lid and he filled it with water and juice and raw veggies snacks and cut up fruit. And had a bin with crackers and things to snack on.
Here's a nice set of pockets that can be hung off of the bed or you could attach to bed rails with Velcro,office clips, or big safety pins. You could get a pretty tote bag to store plastic bins, pencil bags, etc.
Then it could be stored on an end table or next to the bed and lifted onto the bed when needed.
