For the cookie sheets use oven cleaner, just follow the directions on the can.
For the outside bottom of pots and pans use a paste of baking soda and water, let it set overnight and then clean off with a sponge with a scrubber on 1 side. Repeat if necessary.
Once clean, you can keep them that way by baking on parchment paper, which is reusable, several times. Parchment is available in rolls, at Walmart, Costco, kitchen supply stores.
