Use water proof wood glue and use food safe oil to finish it.
For maintenance, use food grade mineral oil. It has no taste and is actually safer than using a vegetable oil because it does not get rancid.
Hey Dido! For glue use Titebond III. This is FDA approved for indirect contact with food. Food touching it when it's cured is 'indirect contact.' There are other FDA approved glues too, but I only have experience with Titebond.
For conditioning use mineral oil. In my experience, mineral oil is perfect! I've had bad experiences with other oils especially olive oil. You're cutting board will start to smell like spoiled food. It's rancid!
Wood glue to assemble it. Mineral oil, salad bowl finish , or butcher block oil to condition and protect it. What kind of wood are you using?

Hi Dido, to protect your cutting board when it's done give it a rub with food-safe mineral oil or a beeswax compound. I wouldn't use cooking or olive oil, it may go rancid.
