Dead head and then let the green parts die down. During the winter dig up the tubers and store them until spring.

Usually in an area where there is frost, dahlias should be dug up after the frost hits them and turns them black. In other cases you may have to remove them before and just cut them back before storing. Be sure to clean off the bulbs as best you can. I usually hose mine off to make sure there are no bugs in the or near the bulbs, dry them for a day or so and then store them in pearlite or vermiculite which can be purchased at your hardware or gardening store.
