The easiest and cheapest way is to use battery operated lights such as puck lights. This way there’s no need to run power to the lights or have any unsightly cords.
They make battery operated stick on lighting that is remote controlled , you can even dim them and set for auto turn off , I just saw them at Costco , last week , am considering getting them myself ...

Here is the shopping link for my all time favorite under cabinet lights! (click blue shopping link) So far I've used them in 4 kitchen renovation projects. They are super easy to install. They come with instructions. You can hardwire them in, or just plug them in and use the switch. They are LED so super duper cheap to leave on, and don't heat up at all. They are also dimmable, they have a toggle on them to control brightness. Seriously, I love these lights!
If you choose battery operated lights, be sure to go with rechargeable.
In my experience these small lights eat batteries like crazy.
