Where my wall tile meets my tub, instead of using caulking I would like to use tile instead.

How much room do you have there? You could possibly install a trim/border tile. So it would just border the current wall tile. You will still have to use caulk though. Here are some ideas for trim tile.

You can install pencil tile but you still need to caulk. The tub moves with human and water weight. That is why you need something flexible like caulk.
Hello there, You could also use a wide flexible bath trim, ut it will still need waterproof sealer.........All methods do!
