I think subway tile is still in but try laying it in a new pattern, like herringbone.
Whatever you select, make sure you've thoroughly researched the difficulties of maintaining odd grout lines (fish scale tiles), rough surfaces (natural unglazed/ multi-dimensional stone), easily stained surfaces (marble), highly reflective surfaces (which can show every smudge and stain), and height of backsplash (do you really want to climb a ladder to clean backsplash tiles that continue to ceiling height?).
For peace of mind, avoid white grout and wide grout lines. The grout/epoxy you select can make a huge difference in how much cleaning will be needed.
