Where do you have them now? Jackets don't need much "organization," they just need a proper home in your closet. Hang from longest to shortest and also by weight. Winter jackets in one section and lighter year round jackets next to them. If you want to go a bit further, arrange by color too. None of my closets have lights, so I break up the dark colors by hanging black, then cream, grays, then whites, navy then reds, brown the rest of the the colors. When I get up at 4 am, it's dark! Hard to tell blacks, browns, charcoal and navy.
By season

If you're looking to store and organzine winter jackets during summer months, you could store them in a dry area on a rolling rack.
I hang ours up when they are not in use for each season
