Paint would be the only option. To add a dark stain will require you to get rid of the varnish/poly protecting the wood. A dark stain won't penetrate through that.

Walnut stain is great! Collect fallen black walnuts, place in mesh bags hanging on a nail. Place buckets under to collect the walnut stain as they age. Wear chemical proof gloves and rags to spread the stain on the wood. I have tables that I stained 40 years ago and they still look great.

I understand you can use gel stains but I can’t say how well it will hold up in a place like a kitchen that gets a lot of wear and tear.
