How can I seal tree stumps for use as seats around my fire pit?
A few weeks ago a storm knocked over a huge branch on to my house. Had a service come out to remove it and had them leave big cut up pieces to use for seats around my fire pit. I want to seal them to keep them from getting weathered and rotting. Asking what would be best to protect them? All and any suggestions would be appreciated.

Rustoleum makes marine coating for boats. That should do it.
You can't seal them until they dry. It will peel. Takes about 1 year for wood to dry naturally. Go ahead and use the rest of summer, put in garage over winter and seal next summer.
I slather on a mixture of Carpenter's Wood Glue with a bit of water on old (sometimes rotted in place) barnwood that I hand-letter for outdoor signs. I set in garage to dry completely. Cover the wood slices thick and heavy, especially on the bark. The glue mix dries hard and clear and creates a watertight bond that is not oily or tacky. Good luck!
A friend used these type of seats for her wedding. They sealed with a weatherproof poly seal.
If I cover my stumps with heavy plastic and stand them on slate outside will that be sufficient for them to dry

They have to dry out first, otherwise you'll have wet rotting wood under the heavy plastic. And it will start to disintegrate and grow mold.
Once dry, coat with polyurethane (marine grade).
