Paint goes a long way to transforming a space. That's how I would start.
There are a few groups on facebook that deal strictly with RV renovations. Take a look there; there are so many ideas and pictures.

Paint will go a long way - walls, cabinets, exterior. Vinyl flooring is inexpensive and easy to put down. Tile isn't difficult to do and you can find some cheap, but the cement board is a little pricey and I would make an investment in a tile saw (HarborFreight). All these things can be done by yourself.
