Yes, a picture would have helped. That could be quite a task depending on the amount of brick, instead, why not make the brick a focal point? Whitewash it so it's not so dark.
Be careful about the structure of your property - does the chimney extend up through the property to a second floor? into the loft? If so you are going to need some advice, you will need either some lintel to support the weight above or to remove the chimney all the way up.
