Sheetrock is probably the cheapest but you could do wood more easily.

You could just paint it or stain it or use wood preserver too. Best wishes.
As you have exposed insulation (it floats around even with backing paper) I highly recommend you put up drywall to enclose it. Any air movement will eventually have fiberglas pieces floating around for you to breathe in - not good!
