How can I create some breaks in solidly black kitchen counter/walls?
I have laminate countertops and the laminate runs up the walls until it meets the cabinets. I have painted the laminate black ( with white cabinets). What can I do to break up some of the black?

How about some decorative peel and stick tile stuck sporadically on the backsplash. Some are very thin with tapered ends so they won't stick out much. You can also paint or stencil faux tile on the backsplash.
You could stencil the back splash to change it up/add a hint of color.
Get a Giani or Rustoleum paint kit and just do your back splash.
We used a Giani kit on ours, if you want to see it

I am liking Dee's idea of using the kit on your backsplash
Without a photo, black & white sounds austere.
I would concentrate on a more-forgiving finish in between, for everyday splashes & wear and tear.
You could glue mixed grey, white, dark grey mixed dark glass tiles to black splash. If u need to grout. Use black. Much easier to keep clean and will pop the right colored tiles. Also search Etsy for Noodle boards. U can get custom made colors and writing or pics for on top of stove, electric or gas (boxed) and use as serving tray too. Art and will break up stark colors
Maybe use a sponge brush and apply some texture with a lighter color?
Try wall decals, they come in all shapes and sizes and are so easy to use. You can see how I used them on my floors here: https://thehoneycombhome.com/floor-stickers-in-the-bathroom/

You can add a painted pattern to the backsplash part, maybe some under cabinet lighting. You could also add some decals as well.
You could add some artwork with command hooks
