Hi Krista: I would scrub it down with a 1/2 lemon and course salt. You can also use vinegar on a sponge to clean your block. Then, rub it down with food safe mineral oil. Use a cloth to wipe up any standing oil after about 10 minutes. That should do it for you. Good luck

Sand down then get lineseed oil and oil the wood let dry then oil again then your done

they make special beeswax for wood blocks.
Most butcher blocks are maintained with food grade mineral oil. I usually bleach any dark areas out first.
Sand the wood down to new wood then get linseed oil and oil the wood and it’s ready to use
