Kitchen Counter Makeover With Paint
I would recommend using a kit by either RustOleum or Giavani. Make sure you follow the directions exactly.
Another option is contact paper. I've seen a lot of people doing that.

I did a faux granite over formica in my previous house. Get a GREAT paint from Sherwin Williams to use as the base coat. It stuck wonderfully and the finish lasted forever. I used a direct-to-metal paint as the base (left over from painting my shed). I used latex colors to dab on the 'granite' look and sealed with probably 5 coats of poly. As said, it lasted for years and the buyers/agents all thought it was real granite! Good luck. (way less money than using a kit btw)

I would use a tension road and maybe have something hold it for extra support in a couple of spots (maybe use command hooks?).
