There is plenty to consider...types of food, supplies, target customers, along with the sanitary and legal considerations.
I would start by checking out the necessary food permits you will need for your state/county before anything else then look for a used food truck once you get your permits, etc
Something else to look into if you are considering operating this type of business is your insurance. Check with your present insurance carrier to see what the premiums may be on a mobile food truck. Also check if you as the owner might also be responsible for paying compensation insurance premiums for any employees that may become injured while on the job.
