Do I need to add something to the paint before painting a pumpkin?

I would like to know if there is a way to add something to paint so it won’t crumble off when painting pumpkins and windows

well pumpkins and windows are definitely two different horses! Windows are no problem as long as you paint insides of glass. Don't know about pumpkins
There is a glass paint, try that
Add a little white glue and see if that sticks to your pumpkins.
You can always paint a thin coat of Mod Podge on the pumpkin and let it dry before you add the paint. Then one coat after to keep the paint on.
