How about Shiplap with big wood beams?
I was going to pre-stain and install tongue and groove boards at one time. It was originally popcorn ceiling. After removing the popcorn, I added drywall joint compound to make a smooth finish. I added crown molding around the room and then repainted the walls and ceiling. The ceiling was a few shades lighter than the walls in the same color palette (instead of white).
