I'm getting ready to put down a laminate wood floor. Can I use a 10" sliding miter saw to cut a 12" board?

Yes! It will take longer because you will need to flip each board and do two cuts instead of 1.
Exactly what Frugal says. Make sure you carefully line up the cuts.

Does your miter have a laser? We ran into the same problem when we were cutting some wood, you'll be fine. Definitely do some test cuts just so you get the hang of where the bad will hit and what you see.
