Ginger is very invasive in a garden, my neighbor planted hers in huge pot planted into the garden area, when she wants some she just digs up a section out of the pot and replaces soil.

We actually grew the grocery store ginger. The ginger roots in grocery stores have been sprayed a product to prevent sprouting. To get around this you'll need to rinse it off everyday, use cool tap water and let it set on the sink or a plate, ours took about a month of this treatment. When you look at the bottom side and see roots starting, then you can put it in dirt. We keep ours in a flower pot and bring it in overwinter.
