Will this be ok to plant in these plastic planters?
So to prepare, I purchased my seeds & 4 planters to be able to put on counter top so that I don’t need to bend or kneel down as it is now very hard to do. My question is will this be ok to plant in these plastic planters? I am not sure if my veggies will grow?

As long as your containers are deep enough, they will grow. Just make sure they receive enough sun. Will need to be watered more often than if in ground. Has your doctor sent you to physical therapy yet? It really does help. I have had 3 surgeries so far and while getting on my knees is easy enough, it is the getting up where I need to be careful. They provide bending and stretching exercise (very much like hatha yoga), and will increase your range of motion over time. This is not your typical gym instructor, these therapists are trained specifically to treat injury patients and work closely with your surgeon and doctors.
After they get bigger you will need to transplant to bigger try to get a raised bed off the ground like 3 feet
i would hate for you to not get good results and I don't think you will be happy with the results you would get growing them indoors if that is your intention. They would need direct sun and full sun, 6-8 hours per day or whatever it says on the pkg. so in other word they need to be outdoors. Also the containers would need drainage holes. I can't tell how deep the containers are but I would think you would need at LEAST 1 foot of soil. You could probably get someone to make a platform from something simple like concrete blocks and treated lumber to set them on outside.
