I have seen several things...plastic tin-style squares; wipeable wall paper; non grouting tile, even stainless steel or copper sheets screwed into place!

I used real tin tiles and put them up with heavy duty velcro. Win.
Of course -- you just need to decide what you want to use - tile, glass, wood, stainless steel, tin ceiling squares ( also come in fiberglass - cutable and easy to install).... the 'look' you want and how much $$ you want to spend. There are LOTS!! of great products available for the DIYer -- even gluing pennies to your wall !
The easiest and least expensive one we found was metallic from Lowe's. Other home improvement stores probably have them too. They look like tiles but are metal and can be cut to size. They come in copperish, silver, and gold looking metal. They should match your kitchen with one. Hope this helps. They are easy to install. If we could do it, any one can
