You could purchase an armoire Or an enclosed entertainment center. Add extra shelves, paint or stain the same as your cabinets. That's what I did in one house I rented. It looked really good and gave me tons of additional storage.

Julie Green - I bought a couple of approximately 18"/20" bookcases (brown & solid), turned them vertical one each corner of my kitchen, & have spices, casserole dishes & this & that. This gave me extre kitchen space. And extra racks in the pantry cupboard. Fold-up ones. 😀
do you have the space to put in book shelves or a wardrobe type unit? Billy bookcases(from IKEA) make excellent pantry shelves without spending too much money...they also have doors available if you prefer closed. I have used them inside closets to make a pantry, in bathrooms for linen storage, in bedroom closet for sweaters, shoes, purses...they are easy to put together, and portable
I would use the old spices and make potpourri, if you like the smell of the particular spice.
Purging is always my first step to any organization. Go through your cupboards and decide what you really like and what you really need. Get rid of all of the Tupperware that no longer has a lid or the ugly bowl someone gave you that you keep in the cupboard out of guilt. Go to Amazon and order vertical file organizers, they are much cheaper than the vertical organizers that are made for pots and pans. This allows you to store things standing straight up especially pans and lids and baking pans. The Dollar Tree has shelf organizers that allows you to expand and double what you can put in your cupboards so you can put your bowels on top of your plates, etc. If you hang a thin sheet of metal inside of a cupboard door you can then attach of magnet with hot glue to your spices and free up the space they're taking. You don't mention if you have a basement but this is also a great place to store dry goods or canned goods along with seasonal items that you don't use often. If you dint have a basement these items can also be stored in under the bed boxes. A tension rod hung inside your vent fan is great for hanging your most used utensils and hot pads. Hope this helps.
Julie as with any other question it is easier to answer if we can see a picture. How flexible are your landlords in letting you screw in the walls etc. although we own our home we have a tiny kitchen and have done lots of small carpentry things to add room for objects
