I hung a floor to ceiling wire spice rack I got at Home Depot. Some may not like the look of it but as a cook i find it attractive and very handy
It really depends on counter top and wall space. Being into ethic spices, I soon maxed out on space in my custom cabintry and got a small diagonal counter top spice rack which itself was soon outgrown necessitating (actually my favorite quick access) four carousel counter top spice racks.
I guess next I'll have to wear a knapsack with any additional spices. Actually I have added a four level counter top just for Caribbean and Mexican salsas.
I purchased most at Bed, Bath and Betons (who are very generous and constant with discount coupons up to 20%).

Like you I have a lot of spices, so I used a piece of tin that was 3 feet wide by 8 feet tall. My local Home depot carried sheets that were 8 feet tall so I just had to cut on one side.
One note, make sure your toddler is not too quiet in your kitchen. My 3-year -old had an expensive afternoon, opening up my spices and checking them all out. On a bright note, the kitchen smelled really good.
