How about changing it up to open shelving to hold cookbooks or fancy serving dishes? I think it would look really nice. In fact, you could install lighting since you already have a connection and grow houseplants in one of the shelves.
I like the idea of a pantry, and it would sure be easy to do. Just add shelves, and make a door on hinges or find a bi-fold one to fit the space. You could make 2 doors for an upper and lower cubboard. I would take the measurements down to Habitat for Humanity Restore, they have tons of doors including bi-folds - I got a set for $25. You could probably also pick up enough scrap lumber to do the supports for the shelf sides (make sure they go into studs or use anchors as they will be holding alot of weight). They might even have shelf width lumber.
For that little bit that sticks out farther, you could add a cell phone charger/holder, a mail center, maybe even a small white board for messaging.
Start by painting the chair and moving it to another room. Baby steps.... Then gradually start upgrading to the shelves , then doors. It'll be a pantry before you know it !
How about setting it up as a coffee station?
since your husband is against any renovations, I'm not sure if putting up shelves is an option. What if you tried to find an existing shelf or cabinet to go over the desk part and also under? it might take some searching to find something that fits. Or if you are a wine drinker, you could put in a wine rack and some glasses. Do you need a place for a microwave? And of course, the chair has to go. You could leave the water bottles on the floor and put up a curtain to hide them.
Well of course your husband is against any renovation. Girl, sometimes it is better to ask for forgiveness than to ask for permission. If I were you, meaning you are capable, I would begin by removing the upper cabinet and the shelf. With that done - now WE must do something about it. Who said "baby steps"? This is your first baby step IMO. Think full fledged pantry to maximize your storage.
I feel your pain, I'm in the same boat with that kitchen desk area. I like the idea of the extra pantry space!
