How do i convert a wood pedestal for dining table to counter height?

You could mount a box on top of the pedestal to raise the tabletop.

Add wood to top of pedestal or replace with legs the correct height.

I've considered both. I am wanting to keep pedestal rather than go with legs.

Standard dining table height (to the top surface) is 28 to 30 inches while countertop height is 36 inches. If you want to use the pedestal to hold an extension of your counter, then measure the exact height. Note that you will probably need to use plywood as a base for any other surface material and this thickness should be part of the total. You can add wood below the base pedestal to increase the total height.
