This is for granite but should work on quartz and marble
You will need nail polish remover to clean the granite surface, straight razor blades, thick super glue (gel), and if you have a darker Granite Countertop you might want to have dark Sharpie marker. Start cleaning your chipped area with nail polish remover. Let the Granite air dry. Tape off the area surrounding the chip and apply just enough glue to fill the chip and rise just slightly above the surface of the stone. Filling the glue up to within flush of the surface of the tape should be sufficient. Once the super glue has completely dried and the tape removed, use a straight razor blade to remove the excess Super glue by “fanning” the excess material away. Wait and allow the glue to cure before cutting with the razor. The time it takes for the glue to cure depends on how deep the chip was, the humidity in the home, etc.(This next step only applies if you have darker Granite) Once desired results are achieved, you may wish to use a colored permanent marker such as a black Sharpie to color the super glue. A Sharpie is permanent and dries quickly. For lighter colored stones, this may not be necessary.
2-part epoxy can be used to fill in the chipped area, but as William indicates, super glue can also work.

I don't have any advice but I'm considering changing my countertops to a solid material. Quartz is on my list and I am curious as to how it was chipped. Just for durability reasons. I hope someone has a good solution for you.
You can’t I take crazy glue fill in the spot let dry keep doing that till chip is filled then take a razor and go across the top get extra off then black sharpie cover it with marker you won’t see it.
Maybe use Resin, or ask suppliers what to do.
What I have used to fix a chip in granite is CA glue. The kind you get in a model store, {airplane, cars etc} If the chip is on the edge, use painters tape to form the area. If in the middle, fist use a magic marker to color the area with the color of the quartz, [the CA glue is clear] the overfill the chip. Let dry overnight or buy and accelerator at the hobby store to dry the CA glue cometly. When dry take a straight edge razor and remove the excess glue . This info was passed on to me by a "stone" guy, it is what they do when chips happen.
