Visit a stoneyard and purchase new marble to be custom cut, chances are you can find something really cool in the remnant section for pennies on the dollar. Or replace with glass or wood from any home improvement store or glass and mirror shop.
Take off the old. Make a template and replace with a marble of your choice
If you mean that you have a table or such with a marble piece that is inserted into the wood, then you can slip a narrow screwdriver or some such and pry the marble up. Your local tile/marble store can cut a new piece for you.
