Floor tile will work fine for a backsplash. You will install it the same way as backsplash tile

Since floor tiles are so huge, I would cut them in half and lay the cut against the counter. This will still give you 6 to 9 inches of backsplash. Once it is gued in place, grout between them and then run a bead of silicone caulk along the counter. 34 hours later you can seal the grout.
You can use floor tile as you would any other tile for a backsplash. You'll likely need to cut it though.
