Suggest underlayment sheets. Then "spackle the joints with underlayment caulk. Also, use underlayment nails space 6 inches apart in all directions. Start from the center of each sheet and work towards each edge
I would use luan, or cement board. Regardless of what final product you install you want it to look good and that begins with the foundation you cant see
