I feel your pain. I hate tile countertops and have rented places where I couldn't rip it out. You could build a counter out of thin plywood, put a nice edge on it, and fit it over the existing counter.
Hi Jackie the only thing that comes to mind is an epoxy resin over the top. You can buy it and mix it yourself and then you simply pour it over the surface you want it to be one. It dries solid and clear. Here's a DIY http://epoxycountertopdiy.com
