To treat thistles growing in a vegetable garden, wait until fall, if possible, after the vegetables have been harvested or died back. Spray the thistle plants liberally with a ready-to-use formula made for home gardeners containing 2,4-dichlorophenoxyacetic acid, triclopyr or glyphosate.
if you are not adverse to chemicals Round-Up works really well on thistles
You can cut them down and over time that will stress the roots, or you can dig them up make sure you get all of the root (they will still come back though) or try a herbicide with glyphosate . You will probably have to do the herbicide serveral times. These thistles are a nusiance to get rid of I have them too.
Thistles are good to eat. Cut the stalk and peel off the tuff outer part, until you have something that looks like a stalk of celery. Cut & sprinkle with vinegar, & salt and pepper. You do this before it makes a flower. In the south, we eat this with boiled crawfish.
The best way is to get some herbicide, to kill them. Then put some black plastic down, or some ground cover. Good luck.
Dig them out the most important point is not let them flower and go to seed.. you will have a million plants next year. Try not to use herbicides as they also kill pollinators, like bees, butterflies, lady bugs, spiders and all beneficial insects. not to mention what they do to the water supply.
