I just keep mine rolled up, not folded until I find another use for them. Is there an area of your home that textiles would be of use? How about a tablecloth? Are you into quilting?
Check all the ideas on www.pinterest.com and there will certainly be something exciting that catches your eye..
You can use the fabric to cover pillows or chair seat cushions. You can make a table runner or placemats. My favorite is to line the back with a shower curtain or plastic table cloth and use it as a picnic cloth that is waterproof on the bottom side.
You can make pillows, or even clothing depending on the type of fabric your curtains are and how much you have.
Shower curtains. Shades for outdoors. Purses. Slipcovers.

Most fabrics can also be painted with oil based paint to create something like oil cloth the stores carried if, the cloth is clean and not soo worn! You can then stencil it or paint what you like on it.
