I used semi gloss washable paint.
I would buy paint specifically made for ease and cleaning and areas of high humidity.
Use a heat resistant paint behind the sink and stove, if you don't have a tall backsplash. I suggest you consider a backsplash of some kind because it will get wet, greasy, smoky, and will need to be cleaned regularly. Paint generally can't take that abuse. Best wishes 😇

I would use an egg shell that provides more washability but doesn't show every flaw as much as gloss paint does.
