Depends on what zone you live in and how temperate your winters are . if it's cold, maybe you can bring it indoors and follow these suggestions: https://www.gardeningknowhow.com/edible/vegetables/pepper/overwintering-peppers.htm
If they are still producing take them in and use a grow light, when finished maturing the peppers, you can see if it still is putting out flowers for more peppers. If you don't want to bring them in, Pull the plant and plant new next year.
