My crew is partial to garlic, so some of it would be done with that. I would go with a simple all purpose seasoning akin to Lawry's. Or a lemon pepper would be nice too. Or how about an herb and sea salt combination? Thyme, parsley or basil and seasalt?
I'm a great fan of simplicity. Your zucchini would be delicious with just a pinch of sea salt, pepper and a touch of ground basil . This combo will give enough extra flavor without masking those lovely zucchinis.!

I would recommend drying the zucchini unflavored and seasoning it after when you prepare it. That way you can vary according to your mood. If you're shredding some, bear in mind it is also Great for muffins!;;
