You might not want to, as the plant would spend energy making new shoots, but not conserve energy for overwintering.
Depends on the bush. Azaleas need to be pruned as soon as flowers die. They set basis for next years flowers as soon as currant blooms are gone. Roses should be cut back in fall, Use leaves and pine needles to mulch for winter and cut off any dead wood when you find it.
Since you're in Maine, I'm with Annette. Here in Texas we trim constantly.
