Have you tried heating the knife up using hot water or setting the blade across a burner for a few seconds?
Maryann, I haven't tried it, but they say put the blade of your knife into boiling water for a few seconds, dry it off, then cut into the chocolate.

you have to add cream to the chocolate chips, as well as butter, so it doesn't harden. Search online for frosting recipe made with chocolate chips or cocoa.
Heat the knife before trying to cut.
Icing or frosting recipes needs a fat of some sort, cream, butter. Change your recipe slightly or try a new one.

When cutting something like this the whole pan can be heated just enough to cut through the chocolate icing. Cut them and the chocolate sets right up. That can be easier than keeping your knife warm.
