Peg board is one really good option for organization or "slat board" like in commercial retail stores... don't forget the spaces between the studs too, being able to recess the storage even that 3 1/2 inches can help. Get some graph paper and plot out the dimensions of your wall, doors etc... photo copy so you don't have to draw it over and over ... then use the graph paper to cut out workbenches, storage cabinets, cars, etc... and move stuff around until it all fits and works... "attic" spaces can hold stuff you only use occasionally... like Christmas stuff... make a plan then make it work for you.
That is my goal too! Mine was great until my parents passed and I had to drag stuff home from their house - has been a mess for years, slowly working on it. Use every single inch of space! Build permanent floor to ceiling shelving if possible. If not, purchase good quality shelving units. Spend the money for good quality storage tubs and label them. Group things together, christmas and other holiday decor, camping gear, tools, yard equipment, etc. You need to make a big mess to get it neat and functional.
Fit out your walls and add a frame around areas using either doors or Curtains or Blinds to make the items disappear......
You need to purge and get rid of what isn't necessary and organize the snot out of it.

Why store stuff you probably will never use? Garages are meant for either cars or stuff and it's hard to use it for both unless it is a big one.
Build shelving and set up various areas for storing the different items in an organized way. Here is a link showing fairly simple build with 2x4's http://www.ana-white.com/2014/09/free_plans/easy-economical-garage-shelving-2x4s
Use the storage overhead too!
Think up....My son had storage in his garage using the rafters that went across...I think they have storage platforms or something but worked for him....his laundry was in the garage, as well as the lawnmower and two cars.
